To learn more about Fantasia’s latest vegan diet favorites, her upcoming holiday meals, and more, The beetroot spoke to Chef Joya, who gave us a behind-the-scenes look at Fantasia’s favorite dishes, including her plans for the upcoming holidays.
The Beet: When and how did you get to know Fantasia?
Chef Joya: It was last October when I received a DM from someone regarding personal cooking, but I thought it was spam so I didn’t open it. The next day I got another message, but this time it contained Fantasia’s name so I told that person to call me and they did. It happened to be Fantasia’s personal assistant who said she found my IG from one of Fantasia’s backing singers who has followed me for years because she loves the look of my food. For the next week I cooked as a trial for Fantasia and she loved my food.
The Beet: What was the first meal you prepared for Fantasia?
Chef Joya: i made mine Not Yo Mama’s meatloafwhich is still one of Fantasia’s favorite dishes.
The Beet: What are some of Fantasia’s favorite vegan dishes?
Chef Joya: Well, she really likes the meatloaf, but she also loves my vegan pork chops, mac and cheese, crab cakes and spinach and Artichoke “Chicken”. What I really love about Fantasia is that she trusts me that I will do whatever I want to do for her. She loves soul food, so I cook a lot of it, but I also like to turn it up, so sometimes I make Caribbean food or Asian food, but when I serve something healthy she usually says, “Ooooh …. nahhh.”
The beetroot: what does Fantasia eat in a day?
Chef Joya: Well, at the moment there have been some diet changes, Fanstia is strictly vegan, but normally I would make some kind of breakfast with vegetables and change the type of cuisine, whether it is soul food or the Caribbean, I would do lunch and dinner some of her favorite dishes like mac and cheese, crab cakes or meatloaf. I like to turn it up because I don’t want people to be bored. I have to say she loves broccoli and its greens.
The Beet: What are you doing Fantasia for the vacation?
Chef Joya: Well, like I said, she’s going through some diet changes right now, so everything could change. But what I do would Plan to make meatloaf, mac and cheese, pilaf rice, greens and veggies, roasted broccoli and asparagus because she really loves her greens and veggies.
The Beet: What does Fantasia’s husband Kendall Taylor like to eat?
Chef Joya: They all eat the same vegan things that I cook, but Kendall isn’t a stew or soup person while Fantisa loves soups and stews.
The Beet: What is your favorite vegan dessert?
Chef Joya: You absolutely love mine Peach Cobbler with a scoop of ice cream.
The Beet: Do you have any tips for budding plant-based chefs or anyone looking to improve their cooking skills?
Chef Joya: Hear what people want, recreate the things people love. You need to understand taste and learn techniques. Whether someone is vegan for animals, health or the planet, we all like one thing in common, great tasting food.
