Roasting mushrooms brings out their delicious natural umami, and with their smooth texture and wonderful bite, they’re basically the perfect accompaniment to a flavorful roast dish. I use king oyster mushrooms for these Romy London garlic butter mushroom scallops. With their thick stalks, they’re ideal for slicing and scoring, and absorb the flavors of garlic and thyme beautifully.
