Giada De Laurentiis just shared a pumpkin carbonara recipe for fall – SheKnows

She has plenty of fall recipes that are absolutely to die for, but no dish is more decadent, cozy, and fall more than her pumpkin carbonara. It’s an interpretation of the classic Roman pasta dish and everyone needs it in their recipe collection. especially as the days are getting shorter and the nights are getting colder.

De Laurentiis makes the rich sauce for their carbonara by mixing together pumpkin puree, chicken broth, eggs, pecorino cheese and nutmeg. The al-dente pasta is placed in a hot pan with sautéed onions, pancetta and garlic, pasta water and a large handful of parmesan. Pour in the pumpkin and egg mixture and let the noodles simmer until the sauce becomes thick and shiny and covers each noodle.

The result is a silky, creamy pasta dish with a strong cheese taste together with a little sweetness and earthiness from the pumpkin. It’s everything we crave for fall, from the long, sipping pasta to the rich sauce to the salty patches of crispy pancetta. Combine it with a side dish of garlic bread so you can scoop every remaining hint of sauce into your bowl, follow the dish with a piping hot slow cooker cocktail and you are ready for the coolest autumn nights.
