Many of us bake year-round largely during those cold winter months, trying out new recipes as we warm up our kitchens, not to mention whet our appetites with the fragrant aroma of baked goods. Gooey Butter Cakes have long been a family favorite in the St. Louis area, but if you haven’t tried Gooey Cheesecake yet, you might be surprised you find it even better.
A benefit of this recipe is that it only requires one 8-ounce package of cream cheese where most cheesecake recipes call for two or more. Another benefit is that it makes a great dessert or morning coffee for breakfast.
No matter when you enjoy this delicious cheesecake, you may not be able to stop on just one slice!
SUITABLE CHEESE CAKE
1 box of yellow cake mix
1 piece of margarine or butter, soft
2-4 tablespoons of water to spread the batter
1 (8-ounce) package cream cheese, softened
1 (14-ounce) can sweetened condensed milk (not evaporated)
1 teaspoon of vanilla
A pinch of cinnamon reserved for the top
Enough powdered sugar for dusting
Mix the batter, 2 eggs and margarine well. Spread batter on bottom and halfway down sides of a greased 9″ x 13″ baking dish. (Use water on your fingers to spread the batter.)
Place cream cheese in a mixing bowl. Beat in eggs, then sweetened condensed milk and vanilla. Spread the filling over the dough on the bottom of the casserole dish. Sprinkle some cinnamon on top.
Bake at 350 degrees for 30 minutes or until browned and set. The mixture will thicken as it cools.
Dust the cooled cake with some icing sugar and cut into squares. Makes 10-12 servings.
