Food Network star Ree Drummond’s delicious spins on the classic Italian dish, risotto, takes the food you love to another level.

Ree Drummond says risotto is ‘perfectly simple’

On her Pioneer Woman website, Drummond poetically gushed about her love for the Italian rice-based favorite.

“When I first tried risotto, I was living and working in Los Angeles,” she wrote. “Anyway, one night our office went to dinner with the CEO, the CFO, and the COO… and when the waitress took our order, all three big wigs ordered the night’s special: risotto. Because I also wanted to be a big wig, I immediately ordered risotto. I had no idea what it even was.”

She soon found that this wouldn’t be the last time she encountered the filling rice dish.

“I can’t remember anything else that happened that night and it wasn’t because of the 874 bottles of Chardonnay that were passed around the table; it’s because after the first bite of this risotto, which was so creamy and textured and flavorful to perfection, I was transported to a completely different plane of existence,” she continued. ” … After that first bite, my life changed forever. I had eaten a perfectly cooked risotto. And I never wanted to go back to what I was before.”

Drummond’s Butternut Squash Risotto

Culinary Personality’s Silky Squash Risotto also includes chili powder, shredded kale, vegetable or chicken broth, turmeric, parmesan shavings, heavy cream, fresh parsley, and of course, arborio rice.

Reviewers on the Food Network website expressed their satisfaction with Drummond’s recipe, saying, “We LOVE arborio rice AND butternut squash is so well prepared. By adding the pretty deep green of kale, we have a great new way to combine these healthy foods. Perfect on its own or as a side, this Drummond dish features aromatic chopped basil paired with sweet, filling shrimp. Paired with arborio rice, garlic, white wine, vegetable broth, lemon juice and heavy cream, this is a dish that hits the spot, as noted by home cooks on the Food Network website.

“Delicious! That was excellent! Made mine pretty much exactly to the recipe – 4 cups broth and juice from 3/4 of a large lemon. Creamy and easy to whip up! Your creamy cheesy orzotto

Arborio rice gets a break in this risotto recipe from Drummond, where orzo pasta is the key ingredient alongside chopped fresh rosemary, shredded red pepper flakes, white wine, heavy cream, grated mozzarella, diced sun-dried tomatoes, chopped kale, and mascarpone and goat cheese.

Food Network said of this dish, “Ree’s orzotto recipe treats orzo pasta like risotto rice, creating a rich and creamy side dish that goes great with salmon, vegetables, or any type of meat.”
