According to the website of the Food Network, only one episode of “Alex vs America” will feature a Hawaiian chef. So it seems certain that Chef Colin Hazama will face the shellfish challenge – and that the show asked Hazama to attend this episode since his wheelhouse includes seafood and shellfish.
Hazama’s love for his family and seafood comes together in his take on his grandmother’s recipe for Shabu-Shabu, a Japanese stew. As he shared Hawaii magazine, the recipe calls for water, bonito flakes, kombu, sake and soy sauce for the dashi. Combine and simmer the ingredients without boiling before straining the broth. Then the seafood includes a white fish, Pacific yellowtail, shrimp, king crab legs, scallops, and cherry stone clams. For vegetables, bring carrots, white radish, tofu, bamboo shoots, red cabbage, enoki mushrooms, shiitake mushrooms, spring onions, mountain yam gelatin, and udon noodles. Both groups should be on separate plates. When you’re done, heat the dashi and add the seafood, shellfish, vegetables, and udon in that order.
“I grew up with the Pacific Ocean that surrounds me and the opportunity to have a sustainable source of fish and shellfish in Hawaii makes our culture and cuisine what it is today,” he explains in his mini profile for his expert site the website of the Aquarium of the Pacific. The biography also notes that, besides cooking, his passions are spear fishing and diving.
