For vegetables, bring carrots, white radish, tofu, bamboo shoots, red cabbage, enoki mushrooms, shiitake mushrooms, spring onions, mountain yam gelatin, and udon noodles. Both groups should be on separate plates. When you’re done, heat the dashi and add the seafood, shellfish, vegetables, and udon in that order.
