Ekaa is back with a refreshing Chef’s Tasting Menu 2.0 inspired by summer and monsoon. With this menu, chef Niyati Rao intends to highlight each individual’s relationship with this season, which translates into essential food memories while being mainly influenced by the ecosystems in which they live. Some of the interesting ingredients that will be on the menu are Indian Himalayan rainbow trout, fermented bamboo shoots, axons (fermented soybeans from Nagaland), myrobalan plum or cherry plums and mangosteen from Kerala, among others. Each one has been carefully added to the menu to highlight its unique taste, texture and aroma, offering a fresh and innovative palette that tickles the taste buds. The best things happen unexpectedly, and to keep the element of surprise alive, the menu isn’t printed, it’s presented live.
